gourmet? no. tasty? yes!

i often whine about my inability to cook and my disinterest in learning how to do it better but one thing i can make (thanks to my friend kathy!) is a tasty chicken pot-pie. this recipe is by no means fancy (or healthy really..) and definitely not 100% homemade but it is tasty and quite possibly the simplest dinner i ever made. i do have a recipe in mind to try sometime soon that is a little more involved and homemade but i haven't gotten around to it yet.

here it is:

1 (2pk) package prepared, frozen pie crusts (see that not healthy part coming in already!)
2 cans cream of chicken soup
1/2 cup milk
2 cups mixed veggies (i stick to the basic peas/carrots mix)
frozen hash browns (about 1.5 cups)
2 cooked and shredded chicken breasts


cook chicken however you like (i just boil it), heat the soup and milk until boiling, stir in veggies, chicken and hash browns and heat until bubbly. layer 1 pie crust in the bottom of a pie pan, pour in filling, top with 2nd pie crust and seal edges. put a few slits in the top and bake for about 35 mins at 400 degrees.

see, not exactly gourmet but really easy, quick and pretty tasty.

one day i'll get around to making a more "homemade" version of this but for now this is a great substitute for the cereal or oatmeal we eat a few times a week. (have i mentioned how awesome my low maintenance husband is lately??)
